Easy Ice Cream Pops Recipe | Mexican Paletas Recipe

Today I am making creamy strawberry, coconut and chocolate ice cream pops. This is the way I like to make Mexican style ice cream pops also known as paletas. Each recipe makes 6 to 8 popsicles depending on the size of popsicle molds.

STRAWBERRY ICE CREAM
16 oz (500 ml) heavy cream
10 oz (300 ml) sweetened condensed milk
16 oz (454 g) fresh strawberries
1 tsp vanilla extract
1/2 tsp strawberry extract
**add a pinch of salt to balance and enhance flavor

CHOCOLATE ICE CREAM
16 oz (500 ml) Heavy cream
10 oz (300 ml) sweetened condensed milk
1 tsp vanilla extract
2 Tbsp unsweetened cocoa powder
**add a pinch of salt to enhance chocolate flavor

COCONUT ICE CREAM
14 oz (396 g) coconut cream
5 oz (150 ml) sweetened condensed milk
1 tsp vanilla extract
1/2 tsp coconut extract
