this is a super easy meal prep recipe for mexican breakfast hash. it takes about 20 minutes or so and makes 6 1 1/2 cup portions. the whole recipe is below:
2 lbs ground pork
1/2 tsp onion powder
1/2 tsp black pepper
1 tsp nacho chili powder
1 bag diced Simply Potatoes
1 can rotel tomatoes w/ habaneros, drained
1 can or package black eyes peas, drained
Ghee for frying eggs, or olive oil, etc.
Brown the ground pork and then drain. Add one bag of simply potatoes to the pan with about 1-2 tbs of oil. Cook over medium heat, covered, stirring every 3 minutes or so, for 12 minutes or until browned and cooked through. Add one can of drained rotel tomatoes and one package or can of cooked, drained black eyed peas. Add the pork back into the pan. Stir to combine. Top the hash with fried eggs. Makes about 6 1.5 cup portions.
