Two recipes in one! Mexican buddha bowl or tortilla. Hmmm. I don’t know many people who don’t like Mexican food. I’m definitely not one of them, anyway! Mexican food is the mother of the epic beans and rice combo, so this definitely had to be in my food series.
This recipe is actually super simple. You can cook your own beans or use canned and besides rice and lettuce you only have to make the sour cream sauce and the salsa.
If you use homemade tortillas that would be another thing of course, but you can just buy them or make the buddha bowl version.
In my tortilla I added some vegan cheese as well and I actually preferred it that way, but that might not be for everyone.
The sour cream sauce is so damn good and it’s now my absolutely favourite sauce for any Mexican dish. It’s super refreshing and a tad spicy, so if you want a mild version just use a mild green chilli instead of a jalapeno.
